What is your favorite brand of cookware?
I always dreamed of copper Calphalon, but what is the best material, in your opinion for pots and pans?
you are right about the copper is a heat conductor, and wonderful is a material very same kitchen as it spreads heat well. Aluminum is not an ideal material for cooking on the stove, since the heat doesn't distribute as evenly as does with any other metal. Cast iron is another excellent conductor of heat to the cookware, and is very popular, but heavy and expensive. it may be a problem to maintain if you do not know how to season properly. my favorite is the same as yours, copper. But Tramontina has a design that has three inside layers of metal, copper, aluminum and stainless steel-it cooks evenly and gives the quality of brown cast iron without the weight or expense.
