Can I use a roaster at the counter as a water bath for pickling?
I have a couple of pickles, but I do not want to spend money on a lot of special equipment. Can I use my counter-oven roasting the top (the kind that is essentially a mold rectangular deep) filled with water as the bath water for my pot of pickles? Do the pots must be completely immersed in water?
The water should cover the jars completely, so that the covers are fully covered at all times, preferably an inch or so underwater. And you must be able to bring water to a rolling boil. If you use small pots, you may be able to make your store above the stove in jars of sauce that you already own.
