How do I make Broccoli, Stilton and Apple soup?

I have a recipe for broccoli and Stilton soup…

Ingredients
2 tbsp olive oil
1 clove garlic, chopped
½ onion, sliced
30g/1oz butter
1 handful grated potato
290ml/½ pint vegetable stock
½ head broccoli, chopped
75g/3oz stilton, cubed
85ml/3fl oz double cream
1 tsp thyme, chopped

Method
1. Sauté the garlic and onion in the butter and oil for 2-3 minutes.
2. Add the potato and stock and simmer for 7-8 minutes until the potato is tender.
3. Add all the other ingredients and simmer for 2-3 minutes.
4. Blend the soup in a food processor.
5. Pour into a bowl and serve.

…but how do I make it with the added apple? Do I just add an apple? Or do I need to dispose of the potato?

substitute half the stock for apple juice then add diced apple to the finished soup

Is Syrup Neccesary in this Recipe?

1 package of silken tofu (~12 oz)
10 oz chocolate chips, about one small package. Many dark chocolate chips are vegan; check the ingredients though if this is a concern.
3 tablespoons maple syrup
1 tsp. vanilla extract; optional.
Directions:

Blend tofu (preferably at room temperature) in food processor, blender, or with hand mixer until just smooth.
In a double boiler, melt chocolate chips with a tablespoon or two of water over low heat. Stir constantly.
Add maple syrup to melted chocolate and combine.
Put chocolate & syrup blend into processor and mix with tofu until creamy.
Pour into very small serving dishes – this stuff is rich. Serve warm or chill until set…

I have syrup. ive just read another recipe, and it didnt say syrup!

It is not necessary but it does add a slightly different texture and sweetness to the recipe. It really doesn’t make much of a difference unless you have really strong tastebuds.

The non syrup recipe probably used a different subsitute such as brown sugar.
